Cook the quinoa, lentils and edamame ahead of time. I like to make batches and put them in the fridge for the week.Add ginger dressing and enjoy!
To make the dressing: pulse the carrots in your food processor or blender to grind finely, then add the chopped ginger, shallot, sesame oil, soy sauce and rice vinegar and blend until puréed. While the blender is running, add the olive oil until smooth. Thin dressing out with water, if needed.
To make your salad, mix the spinach with chopped carrots, top with quinoa, lentils, edamame, berries & seeds. Add ginger dressing and enjoy!
