I saw a prepackaged salad at Trader Joe’s this week called Super Spinach Salad. It looked really good. It also came with a carrot dressing. My friend Heidi and I love to go to this little sushi place in Ann Arbor and they have the BEST carrot ginger salad dressing! We always say that it’s so good, we could drink it. So I knew I had to make this salad. I changed things up a bit, but here is my version and it really was SUPER! 😉
Super Spinach Salad with Carrot Ginger Dressing
Cook the quinoa, lentils and edamame ahead of time. I like to make batches and put them in the fridge for the week.Add ginger dressing and enjoy!
To make the dressing: pulse the carrots in your food processor or blender to grind finely, then add the chopped ginger, shallot, sesame oil, soy sauce and rice vinegar and blend until puréed. While the blender is running, add the olive oil until smooth. Thin dressing out with water, if needed.
To make your salad, mix the spinach with chopped carrots, top with quinoa, lentils, edamame, berries & seeds. Add ginger dressing and enjoy!
The dressing was really refreshing and delicious, although I may use a little less ginger next time and a little more water to thin it out. This salad was so good.. it would make a wonderful lunch or a light supper!
